Thai Green Curry - YIAH Style


Good Afternoon,

Seriously this would have to be the easiest dinner ever for time poor families....

YIAH (Your Inspiration at Home) makes it so easy to make a delicious curry


For this dish I have used the Thai Green Curry Dip Mix - which contains rich, lively Thai flavours and is perfect for chicken and even seafood


3 Simple Ingredients paired with Intense Garlic Extra Virgin Olive Oil and Thai Green Curry Dip Mix

I usually dice and then brown my chicken in the pan with the EVOO, then I add the amount of spice I like ( for my family it's usually 2-3 tablespoons), I then add the capsicum diced and let it all cook through - be mindful that the true intensity of the spice flavour will not come out for at least 30 minutes. Just before serving I add the cream and serve on a bed of brown rice - TASTY...........

52 WEEKS OF GRATITUDE - WEEK 5

SOMETHING SOMEONE GAVE YOU


In February this year I had the pleasure of turning 40, for those of you who know me well you would know that it was really hard for me to accept this milestone. I had the grandest plans to have a Rocky Horror themed party with a photo booth and the best cake ever invented....BUT....when it came down to the crunch I couldn't bring myself to organise it, depressed and anxious were the feeling's it was bringing, the more I thought about celebrating ME the sicker I felt. To be honest I don't hold myself in very high regards and the reality of spending money on myself made me feel physically sick.
Just to keep everyone happy I ended up just having an "Open House"........



Everyone was invited just to pop in over the weekend, say HI and drink with me in my sorrows. The ones who love me made an effort and the ones who didn't....oh well you missed a good time ..... BUT anyway back on track, let's talk about the best gift ever......

I don't know whether my husband got the guilts for not being able to spend this birthday with me or what...i'm thinking more just because he's an amazing person and has absolutely no filter when it comes to money....yep and because i'm amazing and deserve it  - ha ha.

Avocado Chocolate Mousse - YIAH Style


Good Morning.........

Fresh is best they say................

In the case of this recipe you have to eat it there and then or it's not real flash the next day

I was looking in the cupboard one night and going - what the jeepers can I make, then I came across a thought - I had some avocado and I had seen some paleo stuff pop up every now and then on my pintrest about Avocado Chocolate Mousse, I had YIAH Chocolate Powder......I didn't have anything else according to the recipes but I did have Sweetened Condensed Milk and i thought to myself .......Meh, what have I got to loose?? It can only taste like poop.

So I did it.........I mixed avocado, YIAH Chocolate Powder and Sweetened Condensed Milk



One of the other ways I found online to make it afterwards to see if there was anything I could have done different is just as simple: 1 Avocado, 1 tbsp Cacao, 2 tbsp Maple Syrup - you can substitute any of the YIAH chocolate powders for cacao if you wanted a bit of a different flavour.


After it was made I used the Rose White Chocolate and Pistachio and sprinkled it on the cream that I placed a dollop of on top of the mousse, Serve it up in a wine glass just to make it look a wee bit fancy..........
